This little wonder is perfect for those rushed mornings when you wish you could enjoy a leisurely breakfast but are strapped for time. It's a grab-and-go recipe that's as tasty as it is nutritious! Ingredients

For 2-servings, you'll need:

  • 1 cup old-fashioned rolled oats

  • 3/4 cup unsweetened almond milk (or your favorite milk)

  • 1-2 cup strawberries, sliced

  • 1/2 cup cottage cheese

  • 2 tablespoons light cream cheese

  • 1 scoop vanilla protein powder

  • 1 tablespoons honey (or your preferred sweetener)

  • 2 tablespoon chia seeds (optional, but highly recommended)

  • 1 teaspoon vanilla extract

  • A pinch of salt

  • Additional toppings: a few extra slices of strawberries, crushed graham crackers or granola for that lovely crunch, and/or a sweet drizzle of honey

Preparation: As Easy as Pie (or Cheesecake)

1. Blend, Blend, Blend

In blender combine half the strawberries (1 cup), almond milk, cottage cheese, protein powder, honey, and vanilla. It's like creating a canvas of creamy, delightful flavors.

2. Mix, Mix, Mix

In a large bowl or jar, combine the oats, and chia seeds. Pour the blended mixture over the oats and chia, and mix together. Pour half into two glass jars.

3. Patience Pays

Cover the bowl or jar and let it sit in the refrigerator overnight or for at least 6 hours. This rest period allows the oats to soak up all the wonderful flavors and develop a rich, creamy texture.

The next morning, stir up your oats. If they've become too thick, add a bit more almond milk to achieve your desired consistency.
